It gives us great joy to kick off 2018 with Will Cowper as our "Petite Bouche Chef Of The Month."

Sydney born and raised, Will kicked off his career working in European style restaurants in Sydney and eventually joined The Fink Group 10 years ago working at Otto Ristorante Sydney under James Kidman and Richard Petacnik.

Will uses the very best local and international produce he can find to execute an elegant Italian menu bringing classic techniques and a contemporary angle to his dishes at Otto. The classic Italian Carpaccio Di Manzo is served to the customer using the very best Riverina Angus beef, housemade aioli, truffle dressing, Italian capers and finished with a huge pop of pepper from the Petite Bouche baby rocket.

Will's dishes always carry a depth of flavour and respect to the process of the recipe by setting the foundation with a solid stock, sauce or dressing made with the traditional Italian techniques bringing authenticity to the dish.

A dish that represents this perfectly is the Byron Bay Berkshire Pork Cheek which is slow cooked in stock, pressed and covered with a crisp sugar shell and surrounded by mandarin, fiery mustard, charred onion, garlic mustard and almonds.
