We are so pleased to bring you this exceptional chef talent this month. At the age of 28 Joshua Stephen Charles Niland has his culinary career at his feet. The former Est sous chef adventured out on his own to start his business back in September 2016. Saint Peter, Paddington kicked off in a part of Sydney that has seen it's fair share of restaurants come and go. What has seen Josh and his team off to a strong and flying start is his huge amount of discernment. The goal was to serve sustainably sourced, Australian-only seafood and to this present day Saint Peter in Paddington does exactly that.

Josh really is the "nose to scale" chef. His gift in the kitchen is a mix of minimalist plating, understanding complex flavours and his vast knowledge of seafood, which gives Saint Peter a strong fish tale that is propelling him and his team to a very positive place in the restaurant scene.
